Food Allergies Cause Severe Reactions And May Be Quite Common

Food allergies are officially thought to afflict less than 1% of the US population. However, they may not be rare at all. We may just not notice minor reactions, or be "masked" to them since we experience them so often. When we are accustomed to "feeling that way," we may chalk our symptoms up to something else.

Reactions from a serious food allergy can be some of the most severe of allergic reactions. Food allergy reactions range from a tingling sensation in the mouth and lips to anaphylactic shock.

Specific food proteins trigger food allergies. An allergic person's system produces an allergy antibody (IgE) in response to some food proteins. The allergy antibody triggers the release of histamine and other natural chemicals in allergy cells that cause allergic symptoms.
